Chinese noodles 225g/8oz (dried)
Prawns 100g/4oz (peeled, cooked)
Chicken fillet 225g/8oz (thinly sliced)
Carrot 1 (peeled and shredded)
Red pepper 1 small (cored, seeded and thinly sliced)
Bean sprouts 3 oz
Mango powder (amchur) 1 tsp.
Vinegar 1 tbs.
Soya sauce 2 tbs.
Cook the noodles in plenty of boiling salted water, for about 4-5 min. Rinse under hot water and drain thoroughly. Heat the wok and add oil. Stir fry the chicken for 4-5 minutes or until almost cooked. Add the carrots to the wok and cook for 1-2 minutes. Add the red pepper and add the remaining vegetables, also vinegar and soya sauce, Cook for about 2 minutes. Add the cooked, drained noodles and prawns and toss over heat for 1-2 minutes.
Preparation takes about 20 minutes. Use green pepper instead of red, or add other vegetables like mush rooms or peas.
